I am so excited and honored to introduce our Masa Memory Hot Sauce in collaboration with Flamingo Estate. In this Morita Hot Sauce we give a small but sweet taste preview of our NEW Rose Moon Vinegar, a faithful ode to my Nana Rose. (coming soon!)

Hot sauce has been a long-standing staple in my family … We always had a collection of different flavored hot sauces in our pantry, from mild to make you cry HOT. The variety ranged from homemade bottles made by my parents & Nana, many from El Herradero supermarket to special bottles from the weekend Mercado near the San Xavier Mission. I would use every single hot sauce option at every meal and felt incredibly proud that my palate could handle more spice than my brothers or anyone else in the family.

My love for Hot Sauce runs deep. Everyone who knows me and those who have peeked inside of my fridge or pantry, can see that my family hot sauce tradition lives on … and I can’t wait for you to try ours! Creating an organic hot sauce in collaboration with Flamingo Estate with Morita Chiles from Windrose Farm, as well as Moritas from our developing farm Project in Oaxaca - well this in itself, is already a dream come true for me! In addition to this, Flamingo Estate is joining Masa Memory in donating a large portion of profits to Native Seeds Search. Native Seeds/SEARCH (NS/S) is a nonprofit seed conservation organization based in my southeast hometown - Tucson, Arizona. All of Native Seeds/ Search proceeds support their nonprofit mission and enable them to distribute seeds for free to Native American families and community gardens. Details

This Morita Hot Sauce is made using traditional methods -- each ingredient, the chiles, tomatoes, onions, and garlic are all roasted on the comal. Moritas are ripe jalapeños that have turned red and fruity. They are then dehydrated, rehydrated, and smoked. The name means "little blackberry" in Spanish because they tend to have a sweet aroma. To complement the chiles, we use three different vinegars: Apple Cider, Blackberry, and our own Masa Memory Rose Moon Vinegar. This combination gives the sauce a smoky yet floral taste.

About the Moritas

The Moritas we sourced combine the finest growing methods and traditions from both Mexico and California. Windrose Farm provided the last of their Moritas which are grown with biodynamic methods in Paso Robles and I brought back straw bags full of deep red Moritas from Mexico. They were a gift and gesture of communion from the family we are building educational farms with in Oaxaca (and in my southwest hometown in Arizona). We can’t wait to share more about the farms! These farms will be run by Indigenous Elders, who will pass down their knowledge to the community, preserving family food and farming traditions.

Native Seeds Search (NS/S)

Native Seeds/SEARCH (NS/S) is a nonprofit seed conservation organization based in Tucson, Arizona. Their mission is to conserve and promote the arid-adapted crop diversity of the Southwest in support of sustainable farming and food security. Native Seeds/SEARCH seeks to find, protect and preserve the seeds of the people of the Greater Southwest so that these arid adapted crops may benefit all peoples and nourish a changing world.
